Thai green curry แกงเขียวหวานไทย

thai green curry
an authentic recipe 
แกงเขียวหวานไทย
or as i would say; "Gan Keow Wan"

As instructed by my charming mentor in Phaisali, Nakhon Sawan

Ingredients:
thai green curry paste (Nam preet)
coconut milk
sugar, salt
soy sauce/oyster sause/fish sauce
garlic
basil
chilli
veg
meat/tofu (precooked is helpful if not add after step 1)



  1. Add oil to wok and chopped garlic when hot
  2. Add 1 cup full of coconut milk
  3. add nam preet (curry paste) heaped tlbsp and stir before adding 4 tblsp of coconut milk
  4. Mix in a little sugar, salt and sauce for flavor
  5. Meat or tofu added along with some more tblsp on coconut milk
  6. Continuing stirring for a couple minutes before adding vegetables of your choice
  7. 4 more tblsp of coconut milk stirred in
  8. Add basil and stir
  9. After a few minutes, add some chopped or powdered chilli
  10. Check taste and add sugar, salt or sauce to flavour if needed before adding last of the coconut milk
  11. Continue stirring before turning off and plating up in a bowl or over rice or noodles
